Summertime is here! After a long workday, it's very important to take some time to relax. Do you also want to close your workday with a chill? Stay tuned!
This summer, Cathelijne is happy to share her summer chill checklist with us. So all summer long, you will find this fun column with a new tip every week.
Mainly because she is thrilled to share all of her tips with you, and of course we are happy to learn some more about Cathelijne and expand our horizon of interests.
While it's raining cats and dogs outside, it's time for a tip to bring some summer back in our minds.
Hereby I want to share a great recipe for a summer tiramisu!
Don't forget to share some pictures if you've made it yourself!
What do you need?
- 70 ml fresh cream (verse slagroom)
- 40g white caster sugar (witte basterdsuiker)
- 3 eggs
- 280g mascarpone
- 100ml fresh orange juice
- 100ml prosecco Tip: if you want to make it alcohol free, you can use some more orange juice and add a bit of elderflower tonic
- 175g ladyfinger cookies (lange vingers)
- 1 yellow peach
- 1 wild peach
- 1 nectarine
- 10 raspberries
- 3el powdered sugar (poedersuiker)
What to do?
- Whip up the cream with some of the caster sugar. Make sure your bowl and utensils are clean, else the cream won't get stiff.
- Split the eggs and take the yolks and mix those with the remaining caster sugar until you get a light yellow crème. You don't need the egg whites in this recipe.
- Add the mascarpone in small bits to the egg&sugar mixture. Once that's done, you can also slowly add the whipped cream. Don't mix more than needed.
- Mix the orange juice and prosecco in a separate bowl or glass. Now take your baking dish and lay one layer of the ladyfingers. Put half of the orange juice mixture on top of the ladyfingers. Then add half of the mascarpone mixture on top.
- Repeat this step. Cover it with some foil and put it in the fridge for at least two hours so the cream can stiffen.
- Cut the fruits in slices and add them on top of the tiramisu and decorate with powdered sugar.
Ready to serve, enjoy!
