Ingredients:
400g pasta (spaghetti, penne, or your favorite variety)
3 tablespoons olive oil
1 medium onion, finely chopped
3 garlic cloves, minced
1 can (400g) crushed tomatoes or tomato puree
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon sugar (optional, to balance acidity)
Salt and pepper to taste
1/4 teaspoon red chili flakes (optional, for heat)
Fresh basil leaves, for garnish
Parmesan cheese, grated (for serving)
Instructions:
Cook the Pasta:
Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente.
Drain and set aside, reserving 1/2 cup of pasta water.
Prepare the Sauce:
In a large pan, heat olive oil over medium heat. Add the chopped onion and sauté for 5-7 minutes until soft and translucent.
Add minced garlic and cook for an additional 1-2 minutes until fragrant.
Add Tomatoes and Spices:
Pour in the crushed tomatoes or tomato puree. Stir well to combine with the onions and garlic.
Add dried oregano, dried basil, sugar (if using), salt, pepper, and chili flakes. Stir to mix and bring to a gentle simmer.
Simmer the Sauce:
Reduce the heat to low and let the sauce simmer for 15-20 minutes, stirring occasionally. This allows the flavors to meld together.
Combine Pasta and Sauce:
Add the cooked pasta to the sauce and toss well to coat evenly. If the sauce is too thick, use some of the reserved pasta water to loosen it up.
Serve:
Transfer the pasta to serving plates. Garnish with fresh basil leaves and sprinkle with grated Parmesan cheese.
