This Cobb Salad is a hearty and flavorful meal with a perfect balance of protein, vegetables, and a tangy dressing.
Ingredients:
4 cups of mixed lettuce (romaine, iceberg, or your choice)
2 chicken breasts (cooked and sliced)
4 hard-boiled eggs (sliced or quartered)
6 slices of bacon (cooked and crumbled)
1 large avocado (diced)
1 cup cherry tomatoes (halved)
1/2 cup blue cheese (crumbled)
1/4 cup chives (finely chopped)
For the Dressing:
1/3 cup red wine vinegar
2/3 cup olive oil
1 tsp Dijon mustard
1 garlic clove (minced)
Salt and pepper (to taste)
Method:
Cook the Chicken:
Season the chicken breasts with salt and pepper.
Grill or pan-sear the chicken breasts until fully cooked, about 5-6 minutes per side. Let them rest for a few minutes, then slice them thinly.
Prepare the Bacon:
In a skillet, cook the bacon until crispy. Drain on paper towels and crumble into small pieces.
Prepare the Salad Ingredients:
Wash and dry the lettuce, and place it in a large salad bowl.
Hard-boil the eggs, peel them, and slice them into quarters.
Slice the avocado and halve the cherry tomatoes.
Crumble the blue cheese and finely chop the chives.
Assemble the Salad:
In the large salad bowl with the lettuce, arrange the chicken slices, bacon, eggs, avocado, tomatoes, and blue cheese in rows or sections on top of the lettuce.
Sprinkle the chopped chives on top for garnish.
Make the Dressing:
In a small bowl, whisk together the red wine vinegar, olive oil, Dijon mustard, minced garlic, salt, and pepper.
Adjust seasoning to taste.
Serve:
Drizzle the dressing over the salad right before serving, or serve it on the side for guests to add themselves.

Optional:
You can substitute blue cheese with feta or cheddar if preferred.
Add a squeeze of lemon to the avocado to prevent browning.
