1/4 cup crumbled feta cheese (optional)
Salt and pepper, to taste

1/4 cup extra virgin olive oil
2 tbsp lime juice (about 1 lime)
1 tsp honey or maple syrup
1 garlic clove, minced
1/2 tsp ground cumin

Prepare the Ingredients:
Cook the chicken breast if not already cooked. You can grill, poach, or roast it. Once cooked, let it cool slightly and then dice it into bite-sized pieces.
Dice the avocado, halve the cherry tomatoes, dice the cucumber, and finely chop the red onion.
Chop the fresh cilantro or parsley.
