Ingredients
For the Cookie Dough:
1 cup unsalted butter, softened
3/4 cup granulated sugar
3/4 cup brown sugar, packed
1 large egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon (optional)
For the Lotus Filling:
1 cup Lotus Biscoff spread (or any cookie butter)
Optional: crushed Lotus Biscoff cookies for extra texture
Instructions
Step 1: Prepare the Cookie Dough
In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
Add the egg and vanilla extract, mixing until well combined.
In another bowl, whisk together the flour, baking soda, salt, and cinnamon (if using).
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix. Chill the dough in the refrigerator for about 30 minutes.
Step 2: Prepare the Filling
If desired, crush some Lotus Biscoff cookies into small pieces and mix them into the cookie butter for added texture.
Step 3: Assemble the Cookies
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Take a tablespoon of cookie dough and flatten it in your hand. Place about a teaspoon of Lotus Biscoff spread in the center and fold the dough over to seal it. Roll it into a ball.
Place the stuffed cookie ball onto the prepared baking sheet. Repeat with the remaining dough and filling, spacing the cookies about 2 inches apart.
If desired, sprinkle crushed Lotus Biscoff cookies on top of each cookie before baking.
Step 4: Bake
Bake for 10-12 minutes, or until the edges are lightly golden. The centers may look soft, but they will firm up as they cool.
Remove from the oven and let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
Step 5: Serve
