Ingredients:
For the Salad:
4 cups fresh baby spinach leaves, washed and dried
1 cup fresh strawberries, hulled and sliced
1/4 cup thinly sliced red onion
1/4 cup crumbled feta cheese (or goat cheese, if preferred)
1/4 cup sliced almonds (or walnuts, if preferred)
1/4 cup dried cranberries (optional)
For the Dressing:
1/4 cup balsamic vinegar
2 tbsp honey
1/2 cup extra virgin olive oil
1 tsp Dijon mustard
1 garlic clove, minced
Salt and pepper, to taste
Method:
Prepare the Ingredients:
Wash and dry the baby spinach leaves thoroughly.
Hull and slice the strawberries.
Thinly slice the red onion.
Crumble the feta cheese (or goat cheese).
Toast the sliced almonds in a dry skillet over medium heat for about 3-4 minutes, until golden and fragrant. Let cool.
Make the Dressing:
In a small bowl or jar, whisk together the balsamic vinegar, honey, Dijon mustard, and minced garlic.
Gradually whisk in the extra virgin olive oil until the dressing is well combined and emulsified.
Season with salt and pepper to taste.
Assemble the Salad:
In a large salad bowl, combine the baby spinach leaves, sliced strawberries, and thinly sliced red onion.
Gently toss the ingredients to mix.
Add Toppings:
Sprinkle the crumbled feta cheese (or goat cheese) over the salad.
