Ingredients:
4 large ripe tomatoes (cut into wedges)
1 cucumber (sliced into rounds or half moons)
1 small red onion (thinly sliced)
1 green bell pepper (sliced into rings)
1/2 cup Kalamata olives (pitted)
200g feta cheese (cut into cubes or large chunks)
1/4 cup extra virgin olive oil
1 tbsp red wine vinegar (optional)
1 tsp dried oregano
Salt and freshly ground black pepper (to taste)
Method:
Prepare the Vegetables:
Wash the tomatoes and cucumber thoroughly.
Cut the tomatoes into wedges, and slice the cucumber into rounds or half moons.
Thinly slice the red onion and green bell pepper into rings.
Combine the Ingredients:
In a large mixing bowl, combine the tomato wedges, cucumber slices, red onion, and green bell pepper rings.
Add the Kalamata olives into the mix.
Add the Feta Cheese:
Place large chunks or cubes of feta cheese on top of the vegetables.
Try not to crumble the cheese too much, as traditional Greek salads often feature large pieces of feta.
Dress the Salad:
Drizzle the extra virgin olive oil over the salad.
For a tangy touch, you can add red wine vinegar (optional).
Sprinkle the dried oregano evenly over the salad.
