Peach Ginger Crumble Pie

Ingredients
Crust:
- 250g all-purpose flour
- 120g cold unsalted butter, cubed
- 60g powdered sugar
- 1 egg yolk
- 30ml ice water
Filling:
- 800g fresh peaches, sliced (about 5-6 peaches)
- 50g brown sugar
- 20g fresh ginger, grated
- 15g cornstarch
- 1 tsp vanilla extract
- ½ tsp cinnamon
Crumble Topping:
- 80g all-purpose flour
- 50g rolled oats
- 60g cold butter, cubed
- 50g brown sugar
- 1 tsp ground ginger
*Instructions*
1. Prepare Crust
- Mix flour and powdered sugar.
- Cut in butter until crumbs form.
- Add egg yolk and water; mix just until dough comes together.
- Roll out, line a 9-inch pie dish, and chill 30 minutes.
2. Make Filling
- Toss peaches with brown sugar, ginger, cornstarch, vanilla, and cinnamon.
3. Assemble
- Preheat oven to 190°C (375°F).
- Fill crust with peach mixture.
4. Add Crumble
- Combine flour, oats, butter, sugar, and ginger. Rub with fingers until crumbly.
- Sprinkle evenly over peaches.
5. Bake
- Bake 40-45 minutes until golden and bubbling.
- Cool 1 hour before serving.
*Serve warm with vanilla ice cream.*
Note: For extra ginger flavor, add ½ tsp grated ginger to the crumble.
