Honey Lotus Bento Cake (4-inch)

Ingredients
*Cake:*
- 100g all-purpose flour
- 50g crushed Lotus Biscoff cookies
- 60g brown sugar
- 1 egg
- 30ml melted butter
- 30ml milk
- ½ tsp baking powder
*Filling:*
- 100g mascarpone cheese
- 50g Lotus Biscoff spread
- 1 tbsp honey
*Decoration:*
- Extra Biscoff cookies
- Honey drizzle
- Crushed cookie crumbs
Instructions
1. *Cake:*
- Mix flour, crushed cookies, baking powder, and sugar.
- Add egg, butter, and milk; combine well.
- Bake in 4-inch pan at 180°C (350°F) for 18 min. Cool.
2. *Filling:*
- Whisk mascarpone, Biscoff spread, and honey until smooth.
3. *Assemble:*
- Slice cake into 2 layers.
- Spread filling between layers and over top.
- Garnish with cookie crumbs and honey. Chill 1 hour.
Tip: Warm honey slightly for easier drizzling.
