Ingredients:
500g chicken breast, diced
1 egg, beaten
1/2 cup cornstarch
1/2 cup flour
Oil for frying
For the Sauce:
1/4 cup sugar
1/4 cup ketchup
1/4 cup vinegar
2 tbsp soy sauce
1/4 cup pineapple juice (from canned pineapple)
1 tbsp cornstarch mixed with 2 tbsp water (for thickening)
For the Stir-fry:
1 red bell pepper, chopped
1 green bell pepper, chopped
1 onion, chopped
1 cup pineapple chunks (canned or fresh)
2 garlic cloves, minced
Method:
Prepare the Chicken:
Coat the diced chicken pieces in the beaten egg.
In a separate bowl, mix the cornstarch and flour.
Coat the chicken in the flour mixture, ensuring it's well-covered.
Heat oil in a frying pan over medium heat and fry the chicken pieces until golden brown. Remove and drain on paper towels.
Prepare the Sauce:
In a small bowl, combine sugar, ketchup, vinegar, soy sauce, and pineapple juice. Mix well.
In a separate small bowl, dissolve the cornstarch in water to use as a thickener.
Stir-fry the Vegetables:
In a large skillet or wok, heat a little oil over medium heat.
Add the minced garlic and sauté for 1 minute.
Add the chopped red and green bell peppers, onion, and pineapple chunks. Stir-fry for 2-3 minutes until the vegetables are slightly tender.
Combine Chicken and Sauce:
Add the fried chicken to the vegetables in the skillet.
Pour in the sweet and sour sauce.
Stir and cook for another 2-3 minutes.
Stir in the cornstarch mixture to thicken the sauce. Let it simmer for a few more minutes until the sauce reaches your desired consistency.
