Banoffee Pie (9-inch)

Ingredients
*Base:*
- 250g digestive biscuits (or graham crackers)
- 100g unsalted butter, melted
*Filling:*
- 1 can (400g) dulce de leche (or boiled condensed milk)
- 3 ripe bananas, sliced
*Topping:*
- 300ml heavy cream, whipped to stiff peaks
- 1 tbsp powdered sugar
- 1 tsp vanilla extract
- Dark chocolate shavings (optional)
Instructions
1. *Prepare Base*
- Crush biscuits into fine crumbs. Mix with melted butter.
- Press firmly into a 9-inch pie dish. Chill for 15 minutes.
2. *Layer Filling*
- Spread dulce de leche evenly over the chilled base.
- Arrange banana slices in a single layer over the caramel.
3. *Add Topping*
- Whip cream with powdered sugar and vanilla until stiff.
- Spread over bananas, creating swirls.
- Garnish with chocolate shavings if desired.
4. *Chill & Serve*
- Refrigerate for at least 2 hours before slicing.
*Tip:* For homemade dulce de leche, simmer an unopened can of condensed milk in water for 3 hours (fully submerged). Cool completely before use.
Best enjoyed within 24 hours for optimal texture.
