Ingredients
For the Mousse:
6 oz (170 g) dark chocolate (70% cocoa), chopped
3 tablespoons unsalted butter
3 large eggs, separated
1/4 cup granulated sugar
1 teaspoon vanilla extract
1 pinch of salt
1 cup heavy whipping cream
For Garnish:
Whipped cream
Chocolate shavings or cocoa powder
Fresh berries (optional)
Instructions
1. Melt the Chocolate:
In a heatproof bowl, combine the chopped dark chocolate and butter.
Melt over a double boiler or in the microwave (in 30-second intervals), stirring until smooth. Set aside to cool slightly.
2. Whip the Egg Yolks:
In a separate bowl, whisk together the egg yolks and granulated sugar until pale and thick.
Stir in the melted chocolate mixture and vanilla extract until well combined.
3. Beat the Egg Whites:
In another clean bowl, whisk the egg whites with a pinch of salt until soft peaks form.
Gradually add a tablespoon of sugar, continuing to whisk until stiff peaks form.
4. Whip the Cream:
In a separate bowl, whip the heavy cream until soft peaks form.
5. Combine:
Gently fold the whipped cream into the chocolate mixture in two additions until just combined.
Then, gently fold in the beaten egg whites in two additions, being careful not to deflate the mixture.
6. Chill:
Spoon the mousse into individual serving dishes or a large bowl.
Refrigerate for at least 2 hours, or until set.
7. Serve:
Before serving, top with whipped cream, chocolate shavings, or fresh berries as desired.
For an extra touch, consider adding a splash of coffee or espresso to enhance the chocolate flavor.
If you prefer a richer mousse, use a higher cocoa percentage chocolate.
