Ingredients
For the Cookies:
2 cups all-purpose flour
2 tablespoons cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup unsalted butter, softened
1 cup granulated sugar
1 cup brown sugar, packed
2 large eggs
1 tablespoon red food coloring
1 teaspoon vanilla extract
1 teaspoon vinegar (white or apple cider)
1 cup white chocolate chips or chocolate chips (optional)
For the Cream Cheese Frosting (optional):
4 oz cream cheese, softened
1/4 cup unsalted butter, softened
1 teaspoon vanilla extract
1-2 cups powdered sugar (to taste)
Instructions
Step 1: Prepare the Cookie Dough
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar until creamy.
Add the eggs one at a time, mixing well after each addition.
Stir in the red food coloring, vanilla extract, and vinegar until well combined.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
If using, fold in the white chocolate chips or chocolate chips.
Step 2: Shape and Bake
Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, leaving space between each cookie.
Bake for 10-12 minutes, or until the edges are set and the centers are slightly soft.
Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Step 3: Prepare the Cream Cheese Frosting (optional)
In a mixing bowl, beat the softened cream cheese and butter until smooth.
Add the vanilla extract and mix well.
Gradually add powdered sugar until you reach your desired sweetness and consistency.
Step 4: Frost the Cookies (optional)
Once the cookies have cooled completely, spread or pipe the cream cheese frosting on top of each cookie.
Step 5: Serve
