Ingredients:
200g chow mein noodles (egg noodles or any wheat noodles)
2 tbsp vegetable oil
1 small onion, thinly sliced
2 garlic cloves, minced
1 carrot, julienned
1/2 bell pepper, julienned (any color)
1/4 cabbage, shredded
1/2 cup bean sprouts (optional)
200g chicken breast, thinly sliced (or tofu, shrimp, or beef)
2-3 tbsp soy sauce
1 tbsp oyster sauce (optional)
1 tsp sesame oil
1 tsp sugar
1 tsp cornstarch (optional, for thickening)
Salt and pepper to taste
2-3 green onions, sliced (for garnish)
Sesame seeds (optional for garnish)
Method:
Prepare the Noodles:
Bring a large pot of water to a boil and cook the chow mein noodles according to the package instructions.
Drain the noodles, rinse them under cold water to stop the cooking process, and set them aside.
Prepare the Sauce:
In a small bowl, mix soy sauce, oyster sauce, sesame oil, sugar, and cornstarch (if using). Set aside.
Cook the Chicken (or Protein):
Heat 1 tbsp vegetable oil in a large skillet or wok over medium-high heat.
Add the sliced chicken (or shrimp, beef, or tofu) and stir-fry for 3-5 minutes, until fully cooked. Remove from the pan and set aside.
Stir-fry the Vegetables:
In the same skillet or wok, heat the remaining 1 tbsp vegetable oil.
Add the sliced onions and minced garlic, and stir-fry for 1-2 minutes until fragrant.
Add the carrots, bell pepper, and cabbage. Stir-fry for 2-3 minutes until they begin to soften but are still slightly crisp.
Add the bean sprouts (if using) and cook for another minute.
Combine Everything:
Add the cooked noodles and chicken back into the skillet with the vegetables.
Pour the prepared sauce over the noodles and toss everything together, ensuring the sauce coats all the ingredients evenly.
Cook for another 2-3 minutes, stirring frequently, until the noodles are heated through and the sauce thickens slightly.
Season and Garnish:
Taste and adjust seasoning with salt and pepper, if needed.
Garnish with sliced green onions and sesame seeds (optional).
