🍫 Lotus Biscoff Brownies Recipe

📌 Ingredients:
For the Brownie Batter:
170g dark chocolate (chopped)
120g unsalted butter
150g caster sugar
100g light brown sugar
3 large eggs
1 tsp vanilla extract
90g all-purpose flour
30g cocoa powder
1/4 tsp salt
For the Topping:
100g Lotus Biscoff spread (smooth)
6-8 Lotus Biscoff biscuits (whole or broken)
📌 Instructions:
1️⃣ Preheat & Prepare
Preheat your oven to 175°C (350°F).
Line an 8-inch (20cm) square baking pan with baking paper, leaving an overhang for easy removal.
2️⃣ Melt Chocolate & Butter
In a heatproof bowl, melt dark chocolate and butter together over a saucepan of simmering water or in the microwave in 20-second intervals, stirring until smooth.
Set aside to cool slightly.
3️⃣ Make the Batter
In a large bowl, whisk together caster sugar, brown sugar, eggs, and vanilla extract until pale and slightly thickened.
Gradually add the melted chocolate mixture and mix well.
4️⃣ Dry Ingredients
Sift in flour, cocoa powder, and salt.
Gently fold with a spatula until no dry spots remain.
5️⃣ Assemble
Pour the batter into the prepared baking pan and spread evenly.
Warm the Biscoff spread slightly until pourable.
Drizzle over the brownie batter in random swirls.
Top with Lotus Biscoff biscuits — press them lightly into the surface.
6️⃣ Bake
Bake in the preheated oven for 30-35 minutes, until the edges are set but the center is still slightly fudgy.
A toothpick inserted should come out with a few moist crumbs.
7️⃣ Cool & Serve
Allow to cool completely in the pan before lifting out using the parchment paper.
Cut into squares and serve.
