Ingredients:
For the Pie Crust:
1½ cups (190g) all-purpose flour
1 tbsp granulated sugar
½ tsp salt
½ cup (115g) unsalted butter, chilled and cut into cubes
¼ cup (60ml) ice water
For the Filling:
1 cup (240ml) light corn syrup
1 cup (200g) packed brown sugar
3 large eggs
¼ cup (60g) unsalted butter, melted
1 tbsp vanilla extract
½ tsp salt
1½ cups (180g) pecan halves (toasted, if desired)
1. Prepare the Pie Crust:
Mix dry ingredients: In a large bowl, whisk together the flour, sugar, and salt.
Cut in the butter: Add the chilled butter cubes and use a pastry cutter or your fingers to cut it into the flour until the mixture resembles coarse crumbs.
Add water: Gradually drizzle in ice water while mixing until the dough starts to come together. (You may not need all the water.)
Form and chill: Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 1 hour.
2. Roll Out and Prepare the Crust:
Preheat the oven: Preheat your oven to 350°F (175°C).
Roll the dough: On a lightly floured surface, roll out the chilled dough into a circle about 12 inches in diameter.
Transfer to pie dish: Carefully transfer the dough to a 9-inch pie dish, trimming any excess dough around the edges.
Crimp the edges: Crimp the edges of the pie crust as desired, then place the crust in the fridge while preparing the filling.
3. Prepare the Filling:
Whisk the wet ingredients: In a large bowl, whisk together the corn syrup, brown sugar, eggs, melted butter, vanilla, and salt until well combined.
Add the pecans: Stir in the pecan halves until they are evenly coated in the mixture.
4. Assemble the Pie:
Fill the crust: Pour the pecan filling into the prepared pie crust.
Bake: Bake in the preheated oven for 50-60 minutes, or until the filling is set but still slightly jiggles in the center.
Cool: Allow the pie to cool completely before serving. This will help the filling to fully set.
Optional Topping:
Serve with a dollop of whipped cream or a scoop of vanilla ice cream for an extra decadent treat!
Toasting the pecans enhances their flavor. Spread the pecan halves on a baking sheet and toast them in the oven at 350°F (175°C) for 5-7 minutes before adding them to the filling.
Chill the pie crust to help it keep its shape during baking.
