Ingredients:
For the Pie Crust:
1½ cups (190g) all-purpose flour
1 tbsp sugar
¼ tsp salt
½ cup (115g) unsalted butter, cold and cubed
3-4 tbsp ice water
For the Apple Filling:
6 Granny Smith apples, peeled, cored, and thinly sliced
½ cup (100g) granulated sugar
¼ cup (55g) brown sugar
1 tsp cinnamon
¼ tsp nutmeg
1 tbsp all-purpose flour
2 tbsp lemon juice
¼ cup (60ml) fresh cream
For the Oat Cookie Crumble:
1 cup (100g) rolled oats
½ cup (60g) all-purpose flour
½ cup (100g) brown sugar
1 tsp cinnamon
¼ tsp salt
½ cup (115g) unsalted butter, melted
1. Prepare the Pie Crust:
Combine dry ingredients: In a large bowl, mix the flour, sugar, and salt.
Cut in butter: Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to combine until the mixture resembles coarse crumbs.
Add water: Gradually add ice water, one tablespoon at a time, until the dough comes together. Do not overmix.
Form the dough: Gather the dough into a ball, flatten it into a disk, wrap in plastic, and refrigerate for at least 30 minutes.
2. Prepare the Apple Filling:
Toss the apples: In a large bowl, combine the thinly sliced apples with granulated sugar, brown sugar, cinnamon, nutmeg, flour, and lemon juice. Stir until the apples are evenly coated.
