There are three types of polygons:
tri's : three edges and three vertices (okay)
quads : four edges and four vertices (best)
n-gons : any more than four edges and vertices (avoid at all costs)
'Hard surface' models usually have hard, straight edges and can be thought of as man-made. 'Organic' models are more likely to be softer shapes, such as natural shapes and character figures. Cloth is a difficult thing to class as hard surface or organic, as many engines run a cloth simulation on a hard surface to make it look fluid. Maya has the nCloth function for this (Autodesk Knowledge Network, n.d.).
Ideas for Brief 1:

Created a basic crate in Maya out of several reshaped cubes. To create material, right click and hold then select assign new material. This should pop up on the right-hand side of the screen, where its attributes can be changed.
For next week:
Fill out the template planning document for Brief 1, with reference pictures
Create mesh and plan UI
Write up mid-project reflection
