1 pound of ground beef
Diced onion
One large bag of frozen soup veggies - I use the one with peas, lima beans, corn, carrots & peas but you can use whatever combo you like
3 cans of diced tomatoes (the 15-ish oz. size) Crushed tomatoes work too. Use whatever you have.
2 c. water with 2 tsp. Better than Bouillion Beef mixed in, or use beef broth or even plain water works
Put ground beef and onion in IP and set to Saute. Brown beef until onions are soft.
Add everything else into the same pot (no need to drain the beef)
Put the lid on the pot and be sure the valve is set to Sealing.
Push either the "soup" button or manual or pressure cook - whatever your pot has - and set the timer to 6 minutes.
It will take about a half hour for the pressure to build. After the beeper goes off after the six minutes, let it sit for 5 more minutes (natural pressure release). Then turn the valve to "venting" and release the rest of the steam. Be careful not to get a steam burn! (I use a wooden spoon to push the valve over to venting.) Once all the pressure is released, the pin will drop and you can remove the lid. This is really good at this point. It gets even better in the next day or two so feel free to make it ahead of when you want to eat it.
