Baked Oatmeal
This is a great brunch dish or one for a lazy Sunday. It makes alot, so I usually make a half recipe.
1 cup granulated sugar
1 cup brown sugar
4 eggs, beaten
6 cups of oatmeal (you can use either quick cooking or old fashioned. Do NOT use instant. The old-fashioned makes a more
hearty, grainy dish which we really like)
1 Tbsp. plus 1 tsp. baking powder
2 tsp. salt
2 cups milk
1/2 c. vegetable or canola oil
Cinnamon to sprinkle on top
Fruit if you want it - we like sliced peaches and blueberries the best
Mix all of the ingredients except the cinnamon & fruit. Pour into a 9 x 13 greased pan (use a 9 x 9 if you are making a half recipe) Add fruit on top (I stir blueberries into the batter) and sprinkle with cinnamon. Bake for 30 to 45 minutes at 350 degrees. Full recipe serves 10 to 12. Serve warm with milk.
