This soup is the best of ALL worlds - it's inexpensive, easy and quick! Best of all it tastes so darned good, it is company worthy! I recommend you buy your mushrooms at Costco. You won't believe how good this is!
8 oz. (or more!) fresh portabello mushrooms
2 tablespoons chopped onions (I use the dried ones and they work just fine)
2 cloves of garlic, minced
2-3 tablespoons of butter
2-3 tablespoons of flour, separated
2 cups of chicken broth (I use Better Than Boullion)
1 c. half and half
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. grated nutmeg
Slice the mushrooms
Melt butter in soup pot and add onion, garlic and mushrooms. Cook until the mushrooms are soft.
Sprinkle with 2T. flour and stir to coat.
Add the chicken broth and heat until slightly thickened.
Mix the flour and seasonings into the half-and-half, and add to the soup pot. Heat to thicken. Stir frequently.
SOOOOO good!
