This is a very old recipe. I got it from a woman I worked with at my first real job as a legal secretary. Her name was Alice Martin and I just adored her. She didn't cook or bake much, but these were her signature Christmas cookie and I know why. They are easy to make, especially because you can make them in stages as you have time, and they are delicious!
3/4 lbs. butter at room temperature
2 c. granulated sugar
3 1/4 c. flour
1/2 tsp. baking soda
3 eggs
1/2 tsp. cream of tartar
Cream butter with eggs & sugar.
Add baking soda & cream of tartar
Add flour
Divide the mix into about 3 parts and form into logs about 2 inches in diameter on parchment paper. Wrap and freeze until you have time to bake. When ready to bake, slice thinly (about 1/4" but not too thin or your cookies will fall apart in the middle) and place on parchment lined cookie sheets. Top with cinnamon & sugar mix and add a half of a pecan if you wish. You could also use peanuts or walnuts. Bake at 375 for 8 - 10 minutes. (My oven actually takes 12 mins.) Watch closely until they are lightly browned. Cool on racks for a couple of minutes before removing from the parchment.
These are nice and crispy so they "dunk good" with coffee!
