This is one of those great versatile recipes that you can make differently each & every time you make it, based on what is in season at Market.
3 c. shredded hash brown style potatoes (I use the ones in the bag, either fresh or frozen)
1/3 c. butter, melted
seasoning salt to taste
1 c. chipped cooked ham (from the deli)
chopped onion
1. c. shredded cheddar cheese
Misc. veggies
2-3 eggs
1/2 c. milk
salt & pepper
Preheat oven to 425 degrees.
Press hash brown onto the bottom and sides of a deep-dish pie dish. Drizzle with melted butter, and sprinkle with seasoning salt. Bake for 20 minutes or until starting to brown.
Combine ham, onion & cheese in a small bowl. Add whatever fresh veggies you have on hand - green pepper, mushrooms, spinach, broccoli, tomatoes - all are great. In a separate bowl, whisk together eggs, milk, salt & pepper. When crust is ready spread ham/veggie mixture on the bottom and then pour the egg mixture over the top.
Reduce oven temp to 350 and bake for another 25 minutes or until filling is puffy and golden brown.
