This is a real versatile one-pan meal you can make in no time at all and probably without a trip to the grocery store. Because it is so versatile, you most likely will have everything you need in your freezer and pantry. That also makes this one a true budget strecher!
Put a little oil in a skillet and brown some meat. I used boneless, skinless chicken breasts, but you could easily use pork chops or beef strips - even mini meatballs would be good.
After the meat is browned, remove from pan. Add to the skillet: 1 1/2 cups of water, 1 can of "Cream of" soup (I used cream of chicken but use what you think goes best with the kind of meat you are using), 1/2 tsp. onion powder, 1/4 tsp. pepper, and 1 cup of uncooked long-grain white rice. Bring to a boil, then reduce the heat & cover. Cook for about 15 mins., stirring halfway thru, until the rice is cooked.
Stir in some frozen vegetables (I used broccoli but you could use mixed veggies or any others you have on hand). Put meat on top and sprinkle with some shredded cheese. Put lid back on and heat until veggies are done and cheese is melted. This is a yummy, quick and stick-to-your ribs kind of dinner - great for a cold winter night.
