This is a great sandwich to make for a big crowd because you can stretch it really far. And if you have any veggies left over (IF!) you can just toss them with some lettuce to make a delicious salad.
To make the marinade, mix together:
1/3 c. tarragon vinegar
1/4 c. veg. oil (don't use olive oil - taste is too strong for this one)
2 tsp. dried oregano
1/2 tsp. ground mustard
1/2 tsp. black pepper
2 cloves of garlic, finely chopped
Slice one each:
cucumber, red onion, green, red & yellow peppers - you can also slice some plum tomatoes and marinate them too, but I
actually prefer to slice them fresh when you are ready to make a sandwich
Pour marinade over veggies and refrigerate at least 4 hours
Serve on a nice, hearty roll with either chipped turkey or chipped ham and cheese.
