I like to think that as cookies go, these are pretty good for you - relatively high in protein. I also think they could qualify as a breakfast food since they have cereal as a main ingredient. Not that I ever felt it necessary to justify eating cookies!
2 c. flour
1/2 tsp. baking soda
1/2 tsp. salt
1 c. soft butter
2 c. brown sugar
2 eggs
1 c. chopped walnuts
3 c. Special K cereal
Sift together flour, baking soda & salt. Beat butter & sugar together until fluffy. Add eggs & beat well. Add dry ingredients. Stir in nuts & Special K by hand. Mix thoroughly. Bake on ungreased cookie sheets, 2 inches apart. Bake at 350 for 10 mins. Yields about 3 1/2 dozen. **I bake these on parchment paper and when I take them out of the oven, I slide the parchment paper onto the cooling racks until they are completely cool. If you put the cookies directly on the racks when they are still warm, the middles usually drop out and your cookies fall apart.
