Every once in a while you find a recipe that tastes too good to be so easy. This is one of those recipes! And not only is it easy, it is super quick too. Add a nice bottle of crisp cool white wine and everyone will think you are wonderful!!
For each serving:
A few grape tomatoes, cut in half or plum tomatoes sliced
1 clove garlic, minced
2 Tbs. sliced green onions
1 Tbs. minced fresh dill (I'm not a big fan of dill, but don't eliminate this - it adds just the right amount of flavor)
6 jumbo shrimp, peeled with tail on (I always have a bag of these frozen from Costco - a great time saver!)
1 Tbs. olive oil
Feta
Preheat grill. On a sheet of heavy-duty aluminum foil, arrange the tomatoes in the center. Season with salt and pepper. Sprinkle with garlic, half the onion and half the dill. Top with shrimp and remaining green onion, then drizzle with olive oil. Dot surface with clumps of feta.
Seal foil packets and place on grill over direct heat. Cover grill & cook 8 minutes. When serving, garnish with remaining dill.
This is way, way good!!
