This recipe is one that I clipped out of a magazine a long time ago. I know, a paper magazine?! I am a dinosaur!! It is super easy and amazingly delicious! And every time I take it somewhere to share everyone wants the recipe. It is a real crowd pleaser and the best part is it is quick and easy - My three requirements for a great keeper!
1 1/2 lbs. uncooked shrimp, peeled and deveined (I usually use the ones with the tails on too)
2 Tbs. plus 1 tsp. fresh lime juice
2 Tbs. chopped garlic
1/4 tsp. salt
Dipping sauce:
1/2 c. sour cream
1 - 2 tsp. hot pepper sauce
1 tsp. grated lime peel
Combine shrimp, 2 Tbs. lime juice, garlic and salt in a large bowl. Cover and marinate in refrigerator for 15 minutes (or longer).
Meanwhile, blend sour cream, remaining 1 tsp. lime juice, hot pepper sauce and lime peel in a small bowl & set aside.
Remove shrimp from marinade, discarding marinade. At this point you can skewer the shrimp and toss them on the grill or heat a little olive oil in a skillet and cook them over medium-high heat.
Put the skewers on a serving platter and garnish with lime wedges.
