This yummy dish is part of our traditional Christmas dinner and is served with baked ham with raisin sauce, baked pineapple, and of course (!) green bean casserole.
3 Tbs. butter
2 Tbs. flour
1 tsp. salt
1/2 tsp. pepper
2 cups milk
4 cups thinly sliced & peeled potatoes (about 4 medium)
1 small onion, thinly sliced
Place butter in 1 qt. measuring cup & microwave until melted. Blend in flour, salt & pepper. Gradually stir in milk. Microwave on high for 8 minutes, stirring after 4 mins. (Watch this carefully as it almost always boils over and makes a big mess.)
Layer 1/2 potatoes & onion in a greased 2-qt. casserole. Cover with 1/2 of the sauce. Repeat layers. Cover and microwave on high for 17 to 19 minutes (again - watch this carefully too for the same reason). Let stand 5 minutes before serving.
