Broccoli Cheddar Soup

We had this soup on a tour of York County wineries. Let's just say, it was a trip we'll never forget! Thanks for all the laughs Krissy, Adam & Kyle! You keep us young - haha! Our favorite winery was Allegro Vineyards in Brogue, PA. They had quite a buffet featuring foods made with their wines. This soup was so good but, of course, the guy who made it didn't have a recipe. I asked him how he made it and this is what I got. You can play with the ingredients, adjusting them to your individual taste.

Steam some chopped onions & broccoli in the microwave just long enough to take the raw edge off

Put into a soup pot & add some chicken stock and milk. In a separate pan, make a roux with flour, butter, salt & pepper (basically you melt some butter and add flour until it gets to be the consistency of mashed potatoes). Add the roux to the soup pot to thicken the broth. Don't have the heat set too high or you will wind up with concrete. Then add 1 1/2 c. Allegro Vineyards Susquehanna White wine (or any semi-dry white wine). Stir in some cubed Velveeta cheese and some shredded cheddar cheese. Heat through and serve topped with sour cream garnished with chopped scallions and/or chives.
