Truth is, I am not a big fan of pancakes. But I think that is because when I think of pancakes I think of the dry and tasteless kind we grew up on in the 50s and 60s. Well, we have come a long way since then, and the internet is a great place to see new versions of an old standby complete with reviews from people who have made them. This is one of those internet recipes. I bought some Greek yogurt to use as a starter to make my Instant Pot Yogurt. I had to buy a whole pint but only needed 1 tablespoon which meant I had alot left over and it isn't cheap. So I searched for a recipe using Greek yogurt and this one popped up. And can I just say IT DID NOT DISAPPOINT! I really like my oatmeal pancake mix (shared here), but I think this one might move to the top of my list. I hope you agree!
1 1/2 c. all-purpose flour
2 tsp. baking powder
2 Tbs. sugar
1/2 tsp. salt
Combine dry ingredients in one bowl and whisk together.
2 Tbs. oil
2 eggs
1 tsp. vanilla
3/4 c. plain Greek yogurt
3/4 c. milk
Combine wet ingredients in another bowl. Add the dry ingredients to the wet ones.
*You can also add your favorite mix-ins. I added frozen blueberries and it was delicious.
Preheat griddle to 325 degrees. Butter the griddle and pour 1/4 to 1/3 c. batter onto the griddle. Cook until the edges start to look dry and bubbles form, then flip.
Top with your favorite pancake toppings.
Makes about 12 nice-sized pancakes.
