Oatmeal Pancake Mix

When I make this mix, I like to make a whole bunch at one time. I use ziploc bags and measure one batch of the recipe's dry ingredients into each bag. I write the 'wet' ingredients on the bag. That way I have yummy pancakes at my fingertips any time we want!

Place the following into a Ziploc bag and close:

3/4 cup + 1 T. flour

1/4 cup rolled oats

2 T. sugar

2 tsp. baking powder

1/2 tsp. salt

When you are ready to mix up a batch, add the following:

1 c. half-and-half

2 T. vegetable oil or melted butter

1 egg

Stir until combined. It will still be a little lumpy but that is good. It will keep your pancakes nice and fluffy. Gently stir in 1 cup of blueberries.

Pour 1/4 c. of batter onto a hot skillet sprayed with cooking spray. Cook for 2-3 minutes until bubbles form on the top of the pancake and edges start to look dry. Flip & cook for another 2 minutes on the other side.

Sprinkle with powdered sugar and serve with butter and syrup.
