Ingredients
6-8 good sized potatoes
1 kg barbacoa
2 cups sour cream
1-2 sticks real butter (Anchor is a good choice)
3 scallions, sliced thin
1 200 gram block cheddar, shredded
1 large bottle of favorite BBQ sauce
Directions
Bake or boil potatoes until soft at center when poking with a fork
Place potato in a bowl or on a plate and slice open. Top with a few pats of butter.
Warm barbacoa if cool.
Pile 4-6 oz barbacoa onto potato, followed by sour cream, shredded cheese, BBQ sauce and scallions.
