Ingredients
6 large eggs
1 cup sugar
1/2 tsp salt
3 cups whole milk
1 cup heavy cream
1 teaspoon vanilla extract
1/2 teaspoon freshly ground nutmeg
Directions
Whisk together sugar and salt.
Whisk in the eggs until thoroughly mixed.
Heat the milk over medium heat.
Pour egg mix into milk and whisk very quickly. If you have a food thermometer, you want the mix to get to 150-160 F. If no thermometer, look for steam and give it another 60 seconds. You should notice some thickening.
Take the pot off the heat at temp. Add cream, vanilla and nutmeg.
Chill in refrigerator for at least 4 hours (preferably 8) then serve.
Adding 1/2 tsp of cinnamon with the nutmeg is a nice variation.
