Ingredients
1 lb breakfast sausage
1 cup chopped onion
3 tsp minced garlic
7 1/2 oz can diced tomato
8 oz tomato sauce
6 oz tomato paste
2 tsp basil
1 tsp oregano
1 tsp fennel seed (grind in a coffee grinder)
1/2 tsp salt
1/2 tsp pepper
6 lasagna noodles
1 beaten egg
2 cups cottage cheese (or Filipino white cheese substitute)
6 cups mozzarella
1 tbsp parsley
Directions
Cook meat, onion and garlic until meat is browned.
Drain grease. Stir in tomatoes, tomato sauce, tomato paste, basil, oregano, fennel, salt and pepper.
Bring to a boil. Then cover and simmer for 15 minutes stirring occasionally.
Cook noodles and drain.
Combine egg, cottage cheese, 2/3 mozzarella and parsley.
Layer 1/2 noodles, 1/2 cheese filling, 1/2 meat sauce. Repeat with other halves. Top with 1/3 mozzarella.
Bake at 375 for 30-35 minutes. Let stand for 10 minutes.
