Sun-Dried Tomato Avocado Grilled Cheese
Toast two slices of sourdough to your liking, then spread/layer on the following:
cream cheese (i used vegan)
sun-dried tomato pieces
two slices of cheese (i used vegan provolone)
arugula
mashed avocado
sandwich the pieces together, brush both sides with butter or oil of choice, cook on the stovetop for 2-3 min on each side or until crispy and the cheese has melted. slice and enjoy!
2️⃣ high protein avocado grilled cheese
high protein avocado mash:
makes 2 servings
1 large ripe avocado
1 cup rinsed and drained canned white beans
2 tbsp dijon mustard
sea salt
garlic powder
Mash everything together based on desired texture. you can leave some beans more whole than others if you’d like, but i prefer a uniform mash!
