Nepali Potato Soup - Rildok
~Ingredients~
4 medium potatoes - boiled, peeled and mashed
6 cloves garlic – mashed
2 dried chilies – mashed
½ tbsp ground timur – can replace with szechuan pepper
½ cup diced tomatoes
3 tbsp vegetable oil
¼ cup diced red onion
1 tsp ground turmeric
2 cups water
Handful of scallions chopped
Cilantro and green chilies for garnish
~Recipe~
In a mortar and pestle, pound the potatoes for 2-3 minutes till it’s stretchy. Dip your fingers in water and roll the potatoes in small balls, set aside.
In a deep pot heat oil over medium high heat. Add onions and cook for 2-3 minutes.
Add tomatoes, garlic, red chilies and timur/ szechuan pepper. Cook until reduced to half.
Add water, scallions and let it simmer for 3-4 minutes. Drop the potato balls into the soup and cook for another 3-4 minutes.
Transfer to a serving bowl and garnish with cilantro and chilies. Enjoy!
