~Ingredients~

• 4 medium potatoes - boiled, peeled and mashed

• 6 cloves garlic – mashed

• 2 dried chilies – mashed

• ½ tbsp ground timur – can replace with szechuan pepper

• ½ cup diced tomatoes

• 3 tbsp vegetable oil

• ¼ cup diced red onion

• 1 tsp ground turmeric

• 2 cups water

• Handful of scallions chopped

• Cilantro and green chilies for garnish

~Recipe~

• In a mortar and pestle, pound the potatoes for 2-3 minutes till it’s stretchy. Dip your fingers in water and roll the potatoes in small balls, set aside.

• In a deep pot heat oil over medium high heat. Add onions and cook for 2-3 minutes.

• Add tomatoes, garlic, red chilies and timur/ szechuan pepper. Cook until reduced to half.

• Add water, scallions and let it simmer for 3-4 minutes. Drop the potato balls into the soup and cook for another 3-4 minutes.

• Transfer to a serving bowl and garnish with cilantro and chilies. Enjoy!
