MINI STRAWBERRY 🍫 HAZELNUT PANCAKES
Since you were OBSESSED with the mini peanut butter banana pancakes, I thought it was time for a remake 👀🍓 use up those fresh strawberries you have by making these cuties!! They are VEGAN, GLUTEN FREE & LOWER IN SUGAR!
INGREDIENTS
Pancake batter of choice (v/gf banana pancake batter on my blog!!)
1/2 cup whole strawberries
1-2 tbsp chocolate hazelnut butter
1 tbsp oil for frying
DIRECTIONS
Start by making your pancake batter of choice. Set aside.
Wash strawberries, remove tops and slice into thick coin-like slices.
Place a healthy dollop of chocolate hazelnut butter on each slice.
Place chocolate hazelnut covered strawberry slices in pancake batter one at a time and use a fork to cover the entire slice in batter. Let the batter drain off the fork as much as possible before adding to the heated pan.
Heat a tablespoon of oil in a pan over medium heat. Add strawberry slices (chocolate hazelnut butter side up) to the heated pan. Grill for 3 minutes on one side, flip, and then another 1-2 minutes on the second side or until batter starts to bubble and turn golden brown.
Serve immediately or let cool and store in airtight container for up to 3 days.
