10 Minute Peanut Noodles
Ingredients:
2 servings noodles of choice (I used fresh thin wheat noodles)
2 tbsp peanut butter
1.5 tbsp soy sauce
Splash of dark soy sauce, for colour (optional)
1.5 tsp sugar
2 tsp toasted sesame oil
1 tsp chilli crisp/oil, or more to taste
1 heaped tsp grated ginger
1 clove garlic, finely chopped
Method:
Cook the noodles according to packet instructions. Drain and reserve 1/3 cup of the water. Rinse noodles with cold water then set aside.
In a bowl, combine all of your sauce ingredients and mix well. Slowly add in the reserved water to thin out the sauce (start with 1/4 cup and use the whole 1/3 cup if it’s too thick)
Add in the cooked noodles and mix well until evenly coated.
To serve, garnish with roasted peanuts and green onion. Pair with veggies and your choice of protein for a complete meal. Enjoy!
