INGREDIENTS

• 2 medium potatoes, peeled & chopped

• 1/2 head of cauliflower, chopped into florets

• 1/2 a garlic bulb

• 1/4 red onion, chopped

• 3 tbsp evoo

• salt, pepper

• 1 1/2 cups vegetable broth (or more, depending on how runny you want it to be)

TOPPING

• coconut cream

• fresh thyme

• baguette

• @gustafoods cheese

DIRECTIONS

• add the potatoes, cauliflower, garlic, onion, olive oil, salt, and pepper to a baking dish and cover with aluminum foil. bake at 400F for 25-30 minutes covered and 10 more minutes uncovered. add all the ingredients to a blender along with vegetable broth and blend until smooth. pour into a bowl, top with coconut cream, fresh thyme, grated cheese, and crushed pepper. enjoy!
