The process for making Tikki and Kebab starts with the receipt and inspection of raw materials (RM) and vegetables. After approval, RM is prepared as per the recipe, and vegetables are cut to specification. The stuffing is then prepared and formed into Tikki or Kebab shapes as per the required size. These are then partially fried to 65% doneness, and the core temperature is checked to ensure it exceeds 70°C. Once cooked, the products are blast frozen at -32°C to -40°C for 4 hours until the core temperature reaches ≤ -18°C. This is followed by primary packing and a metal detector check to ensure safety. Secondary packing is completed, and the products are stored in cold storage at -18°C. Finally, they are dispatched at -18°C, maintaining the cold chain for product integrity.
