The preparation process for Stuffed Paratha begins with the receipt and inspection of raw materials (RM) and vegetables. Once approved, RM is prepared according to the recipe, and vegetables are cut as per specification. This is followed by dough mixing and dough ball cutting. Simultaneously, stuffing is prepared as per the required recipe. Each dough ball is then filled with the stuffing and rolled into parathas of uniform size. The parathas are then cooked and cooled before moving to primary packing. They are blast frozen at -32°C to -40°C for 4 hours until the core temperature reaches ≤ -18°C. After freezing, secondary packing is done, and the product is stored in cold storage at -18°C. Finally, the stuffed parathas are dispatched at -18°C, maintaining the cold chain throughout.
