The process for preparing Indian flatbreads (Tandoor range) begins with the inspection of raw materials (RM) and vegetables, followed by vegetable cutting as per specification. The RM is prepared according to the recipe, and dough mixing is carried out to achieve the desired consistency. The dough is then cut into portions, undergoes proofing, and is rolled out. If applicable, garlic or other vegetables are added to enhance flavor. The flatbreads are then baked in the tandoor at 65% cooking temperature, with the core temperature of the product being checked to ensure it reaches 72°C. After baking, primary packing is done, followed by blast freezing at temperatures between -32°C to -40°C for 4 hours, until the core temperature reaches ≤ -18°C. Secondary packing is done to ensure proper handling and protection, and the product is stored in cold storage at -18°C. Finally, the product is dispatched, maintaining a consistent temperature of -18°C to preserve its quality during delivery.
