Frozen Amba Haldal, or frozen mango powder (Amchur), is a convenient way to preserve the tangy, sour flavor of raw mangoes for use in various dishes. While typically found in its powdered form, freezing the paste or pulp can maintain its nutritional value and versatility. Here are some common applications and uses for frozen Amba Haldal:
1. As a Sour Addition to Curries and Stews:
Curries and Gravies: Add frozen Amba Haldal to curries, gravies, or stews to introduce a sour, tangy kick. It works particularly well in Indian, Pakistani, and other South Asian dishes like dal, chicken curry, and mutton curry, adding depth to the flavor profile.
Vegetable Stews: It can also be used in vegetable stews or sambar to enhance the sourness without needing fresh raw mangoes.
2. In Pickles and Chutneys:
Pickles: Amba Haldal is often a key ingredient in traditional mango pickles. You can add frozen Amba Haldal paste to oil-based pickles to provide tanginess, complementing the spices and oil.
Chutneys: Use frozen Amba Haldal to make chutneys, either on its own or combined with other fruits like tamarind or apple. This will lend a tangy element to the chutney, which pairs well with grilled meats, snacks, and bread.
3. As a Seasoning for Street Food and Snacks:
Chaat Dishes: Use frozen Amba Haldal in chaat (Indian street food) like pani puri, bhel puri, or sev puri. The frozen form can be thawed and added to the chutneys or directly sprinkled over the dish for a tangy flavor.
Snacks and Chips: Sprinkle thawed Amba Haldal on roasted peanuts, chickpeas, or even aloo chaat to provide a sour note. It can also be added to chips or fries for a refreshing twist.
4. Marinades for Meat, Fish, and Vegetables:
Meat and Fish Marinades: Thaw and mix frozen Amba Haldal with other spices to create marinades for meats like chicken, lamb, or fish. The tangy mango powder helps tenderize the proteins while adding a fresh, sour flavor.
Vegetable Marinades: It can be used to marinate vegetables such as cauliflower, potatoes, or paneer for grilling or roasting, infusing them with a zesty taste.
5. Rice and Grain Dishes:
Biryani and Pilaf: Frozen Amba Haldal can be added to rice-based dishes like biryani, pilaf, or jeera rice. The sourness balances the rich spices and enhances the overall flavor.
