Our Frozen Laccha Paratha is a flaky, multi-layered Indian flatbread that brings a touch of indulgence to any meal. The process for preparing flatbreads begins with the receipt and inspection of raw materials (RM) and vegetables. Once verified, RM is prepared as per the recipe, and vegetables are cut according to specifications. Dough is then mixed and portioned through dough ball cutting. Each dough ball is rolled out to the required size and cooked. After cooking, the flatbreads are cooled and moved to primary packing. They are then blast frozen at -32°C to -40°C for 4 hours until the core temperature reaches ≤ -18°C. Following this, secondary packing is done to ensure product integrity, and the flatbreads are stored in cold storage at -18°C. Finally, they are dispatched at -18°C, maintaining the cold chain.
