The process of making momos begins with the receipt and inspection of raw materials (RM) and vegetables. Once approved, RM is prepared as per the recipe, and vegetables are cut according to the required specifications. Dough is mixed to the right consistency and then divided into dough balls. Simultaneously, the stuffing is prepared. Each dough ball is rolled out to the desired size, filled with the prepared stuffing, and shaped into momos. These momos are then steamed to achieve proper cooking. After steaming, they are blast frozen at temperatures between -32°C to -40°C for 4 hours until the core temperature reaches ≤ -18°C. Once frozen, primary packing is done, followed by metal detection to ensure product safety. Secondary packing is then completed, and the momos are stored in cold storage at -18°C. Finally, the product is dispatched at -18°C, maintaining the cold chain throughout.
