The preparation of spring rolls begins with the receipt and inspection of raw materials (RM) and vegetables. Once verified, RM is prepared as per the recipe, and vegetables are cut according to specifications. The stuffing is then prepared by combining the ingredients as per the required formulation. Each spring roll is assembled by rolling the stuffing in patti (wrappers) according to the size specifications. The rolled spring rolls are then blast frozen at -32°C to -40°C for 4 hours until the core temperature reaches ≤ -18°C. After freezing, primary packing is done, followed by a metal detector check to ensure food safety. Secondary packing is completed next, and the rolls are stored in cold storage at -18°C. Finally, the spring rolls are dispatched at -18°C, maintaining the cold chain throughout the distribution process.
