Chocolate-Covered Peanut Butter Granola Bars

School can be exhausting sometimes. Often, students get home tired, craving a flavorful yet convenient snack. Recipes, however, are often complicated, requiring much time and effort. This makes it nearly impossible for busy students to enjoy an after-school snack. Fortunately, there is a solution to this problem: peanut butter chocolate granola bars.
Peanut butter chocolate granola bars are perfect as an after-school snack. They’re savory, sweet, and chewy, yet easy to make. They only require four ingredients, and depending on the type of granola and chocolate used, they can also be vegan and gluten free.
The recipe below is by Yana Mehta, a PEN Peer Leader:
Ingredients:
1 cup granola
⅓ cup peanut butter
semi-sweet chocolate chips
1 tsp clarified butter
Directions:
Mix the peanut butter and granola together in a bowl.
Fit a baking sheet into a dish.
Lay the mixture on top of the baking sheet and press it flat.
Leave in the fridge for about 10 minutes to harden.
Melt the chocolate chips with the clarified butter.
After 10 minutes, take the granola out of the fridge and cover with the chocolate so it forms a thick coat.
Freeze the granola bar until hardened.
Cut and enjoy!
