After having a lasagne and a calzone in a roll, I am craving lighter food. A light meal to me is basically vegan cooked with minimal effort. I've grabbed whatever I have in the fridge and make a combo salad with quinoa, a whole grain which will give us plenty of healthy fats and antioxidants. We cook it like we cook rice but I usually soak it in lemon water beforehand to get rid of the mild bitterness. The rest of the veggies blend well with one another. Can't believe the stir-fried beetroot strips taste so good on its own. I will definitely add it to my regular diet.
