My new batch of S3 students made me smile with their lovely flatbread for their first online FSci lesson. Now, they should know that without water, gluten will never exist, and without kneading, their flatbread won’t be stretchy. Tomorrow they will cook something for people who have celiac disease. To help them manage with the practical, I have made this gluten-free rice pudding simply with leftover rice. They will easily nail it.
